VINEYARDS
Mother of our wine is a land of alluvial origin. The vineyards cover about 10 hectares, they are protected to the north by the Alps which makes the sweet and tempered climate. The leaves breathe the sea breezes, quite close and, prolonged sun stops combined with the current hot, serve to strengthen the vitality and get sugar during delicates months end of summer .
Their optimal arrangement from north to south to ensure perfect exposure to get the best ripening of the grapes that are picked only by hand.
The vineyards are spread out over a flat area at an altitude of about 100 m.s.l. all to surround the family house and cellar. The dense plants (about 4000 plants per hectare) are still set to get limited yields, in full respect of the provisions of the product specification of the Collio.HARVEST
After a year of work comes the moment of harvest. It is the most important moment, where you can not go wrong, if you collect too early or too late risks rendering everything. Of each vine if it follows the maturation, each variety is constantly tasted and analyzed, we observe the sky to see what the weather will do, you look at the weather forecast, very often you decide to wait to arrive at optimum maturity, sometimes not, it's time to go out to bring the grapes in the cellar before the bad weather will damage everything.
For the collection, we rely on for decades to experienced people, who know the plants as if they were their own, doing so only the best grapes are harvested, leaving the vine any damaged clusters.
Usually begins in early September with Pinot Grigio, earlier, then the Traminer aromatic, Chardonnay, Tocai Friulano and so on with the whites. October is the time of the red, Merlot, Refosco, until Schioppettino, the late.
The grapes are immediately transported to the winery and working during the day.
Generally there are no timetables, every night you go to sleep later because the work must be finished.CELLAR
The winery and the techniques used are simple concept, are taken to respect, preserve and enhance the characteristics of the grape that turns naturally in this noble product rich in color, aromas and flavors.
